1. Sauté onions in 4 tablespoon water until translucent.

2. Add remaining ingredients except for the spinach.

3. Simmer for 10 minutes.

4. Add the spinach and cook for 25 minutes.

We first found butter chicken in an Indian restaurant in KeriKeri, New Zealand. Though this is not actually a traditional Indian dish it has become a cultural favorite in New Zealand and can be found pretty much anywhere in the country. The thick creamy sweet sauce is the essence of comfort food and goes great with our sweet potato flatbread.
